Dough Roller

Measure or weigh flour and other ingredients to prepare dough, then combine measured ingredients in bowls for mixing while setting time and speed controls for machines. Check equipment to ensure it meets health and safety regulations and perform necessary maintenance or cleaning. Place dough in pans or on sheets, store it in a walk-in refrigerator, and cut, knead, roll, and shape dough to form pizza blanks. Prepare or maintain inventory or production records and adapt ingredient quantities to match the amount of items to be baked. Clean dough equipment and the dough room daily. This work occurs from 6:00 am to 10:00 am as part of our fresh dough preparation process at Gatti's restaurants.
