Dish Machine Operator/Prep Cook

Maintain cleanliness and sanitation of all glassware, tableware, and cooking utensils using mechanical and manual methods per Gyu Kaku standards. Set up, maintain, and break down the dish machine area, garden bar, and dish areas. Complete cleaning responsibilities including walk-in refrigeration, prep, and dry storage zones. Rinse, wash, sort, and stack dishes, returning items to the line or proper storage. Sweep exterior trash, deck scrub walkways, and back dock areas. Maintain clean, stocked restrooms and kitchen mats. Adhere to safety guidelines, dress code, and shift attendance requirements. Requires slip-resistant shoes.
