Job Summary

Lead the performance, profitability, and strategic direction of two venues — the Spanish fine dining restaurant and SEEN Rooftop Bar — at NH Collection Sydney, establishing service standards and an operating framework for world-class guest experiences. Develop and implement revenue-driving strategies across both venues, build and mentor a high-performing F&B leadership team, and collaborate with the Executive Chef to deliver a seamless dining experience. Responsible for budgets, forecasts, financial results, and implementation of operational systems, service standards, training programs, health and safety compliance, and supply-chain relationships to sustain exceptional guest experiences while achieving strong commercial results.

Required Qualifications

  • Extensive senior Food & Beverage leadership experience within luxury hotels or premium standalone venues
  • Significant experience managing fine dining restaurants and high-end bar operations
  • Proven success leading teams in sophisticated, service-driven environments
  • Strong commercial acumen and experience managing budgets and profitability
  • Excellent leadership, communication, and stakeholder management skills
  • Tertiary qualifications in Hospitality Management or Business (preferred)
