Dietary Services Manager - Full-Time Day/Evening

Job Summary

Manage the Dietary Services department by recruiting, interviewing, hiring, training, and supervising staff while ensuring Federal/State regulatory compliance. Oversee budgeting, labor management, and production schedules to prepare meals according to physician orders, resident care plans, and standardized recipes. Coordinate with Registered Dietitians for nutritional assessments, menu reviews, and therapeutic diet substitutions. Conduct audits of meal services, food safety, storage, and temperature logs to maintain compliance with CMS and state regulations. Monitor resident weight changes, address complaints, and ensure adherence to HIPAA and infection control policies. Perform duties requiring significant physical activity, including lifting up to 50 pounds, standing, and operating kitchen equipment in a post-acute care setting.

Required Qualifications

  • High School diploma (or equivalent)
  • High volume food preparation experience
  • Computer proficiency with Microsoft products
  • Ability to read, write, speak, and understand English
  • Ability to withstand sudden temperature changes from heat of the kitchen to the cold of the freezers
  • Ability to identify chemicals, and properly use and dilute them
  • Ability to relate positively, effectively, and appropriately with residents/patients, families, community members, volunteers and other center staff
  • Meets all health requirements, as imposed by law
  • Ability to taste and smell food to determine quality and palatability
  • Ability to handle and manipulate equipment in supervising, demonstrating, and assisting in food preparation and serving
  • Demonstrates basic computer knowledge and ability with an aptitude to learn company applications

  • Must report resident/patient complaints to management
  • Must maintain confidentiality of resident/patient information
  • Must follow and adhere to Center's policies and procedures implementing HIPAA requirements for the privacy and security of protected health information
  • Must use and/or disclose only minimum amount of Protected Health Information necessary to complete assigned tasks
  • Must report all suspected violation of company's HIPAA policies or procedures to Center Privacy Designee
  • Must follow infection control standards, policies and procedures
  • Must use required protective equipment
  • Must complete training with all dietary staff upon hire and annually
  • Must maintain temperature logs and cleanliness for all equipment
  • Must ensure proper storage and handling of food in center
  • Must protect food in all phases of preparation, holding, service, cooking, and transportation, using HACCP Guidelines
  • Must comply with laws and regulations applicable to position and act in accordance with Center's Compliance Program
  • Must attend and participate in in-service training, quality assurance/performance improvement committees and other meetings as scheduled and directed
  • Must understand nutritional requirements for the resident population and menu options and availability
  • Must understand and maintain disaster plan for dietary department
  • Must coordinate with the department head team
  • Must review and assure menus are served as written (regular and therapeutic) and substitutions per policy with Registered Dietitian (RD) approval
  • Must assure that foods are prepared according to production schedules, menus, and standardized recipes
  • Must coordinate with RD to complete nutritional assessments on residents within required timeframes
  • Must attend Care Plan meetings per policy (as needed)
  • Must monitor weight gains/losses and communicate/coordinate any concerns with RD/Clinical team
  • Must audits meal services to assure compliance with systems, policies and procedures
  • Must ensure mealtimes are posted and monitored for compliance
  • Must ensure planned menus, diets, and portion control are followed
  • Must ensure dining experience of residents is positive and hospitable
  • Must ensure staff are trained regularly on proper dining room service
  • Must ensure receiving/storage meets Center and regulatory standards
  • Must complete other audits as directed
  • Must conduct in-services staff as indicated (Cooks meeting and all staff as needed)
  • Must recruit, interview, hire, train, coach, evaluate, discipline and, when necessary, terminate departmental employees
  • Must maintain working knowledge of budgeting and working within its confines
  • Must monitor labor management/control including staff schedules
  • Must follow Federal/State regulatory compliance and adherence to center policies and procedures
  • Must follow CMS/State regulation for education and experience required for this position at all times

Desired Qualifications

  • Experience in a fast-paced environment
  • Associates degree in related field
  • Experience in industrial food production preferred
  • Post-acute care or health care experience preferred
