Job Summary
Assist the Dietary Manager in planning, organizing, and supervising daily dietary operations at a skilled nursing facility. Oversee cooks, aides, and staff during shifts while ensuring meals meet physician orders, therapeutic diets, and resident preferences. Monitor food quality, sanitation, and temperature compliance with CMS, AHCA, OSHA, and FDA standards. Serve as acting department manager when the Dietary Manager is unavailable. Support hiring, scheduling, training, and performance evaluations for dietary employees. Manage inventory, reduce waste, and maintain accurate production and sanitation logs. Address resident food concerns promptly and collaborate with nursing and dietetics teams to accommodate allergies and cultural needs. Work weekends, holidays, and flexible schedules in a fast-paced kitchen environment.
Required Qualifications
- High School Diploma or GED
- Minimum one to two years of supervisory experience in dietary or food service
- Ability to prioritize multiple tasks in a fast-paced environment
- Basic computer skills including Microsoft Office and dietary software
- Ability to maintain confidentiality in accordance with HIPAA
- Frequently stand and walk for extended periods
- Lift, carry, push, and pull up to 50 pounds
- Bend, reach, squat, kneel, and climb as necessary
- Ability to work weekends, holidays, and flexible schedules as needed
Desired Qualifications
- Coursework in Dietary Management, Food Service Management, or Nutrition
- Certified Dietary Manager (CDM) certification
- Previous experience in a skilled nursing facility, long-term care, hospital, or healthcare food service
- Experience with therapeutic diets
- Knowledge of therapeutic diets and modified texture diets
- Knowledge of food safety and sanitation regulations
- Strong leadership and organizational skills
- Excellent communication and interpersonal skills
- Certified Dietary Manager (CDM) credential
- ServSafe® Food Protection Manager Certification
- Experience with PointClickCare or other long-term care dietary software
- Knowledge of Florida skilled nursing regulations and CMS survey processes
