Job Summary
Oversee daily kitchen operations and manage teams across The Coffee Club, Krispy Kreme central production unit, and Dairy Queen Commissary. Lead product development by creating prototypes, formulating recipes, and refining taste profiles through experimentation and quality audits. Drive menu engineering to expand existing ranges and source raw materials while maintaining Halal status where relevant. Establish and update food safety standards, hygiene procedures, and specification manuals for inventory and recipes. Collaborate with marketing stakeholders to align menu messages with consumer needs and optimize production schedules to control labor hours and variances. Troubleshoot equipment issues and ensure full compliance with franchisor requirements.
Required Qualifications
- Asian and western cuisine expertise
- Management of The Coffee Club Kitchen, as the Head of Chefs
- In charge of Krispy Kreme central production unit
- In charge of Dairy Queen Commissary (central production unit)
- Creating product prototypes and recipe formulation
- Refining taste profiles based on experiments
- Suggesting changes to improve existing processes
- Conducting in quality audits
- Formulating food production and hygiene standards and procedures
- Menu Engineering Leading, brainstorming and developing new dishes/ expanding existing product range
- Sourcing raw materials and ingredients
- Arranging and evaluating product sampling
- Identifying Halal status product (if relevant)
- Organize the kitchen and lead the team
- Oversee the kitchen's day- to-day operations
- Collaborating with marketing department personnel and other related stakeholders
- Maintaining and updating the specification manuals/database for food/galley inventory product items
- Accurate recording of data for all recipes
- Ensures the team is adhering to and complying with all franchisor requirements
- Monitoring food safety requirements
