Culinary Services Director

Job Summary
Create, plan, and implement all culinary services department functions in cooperation with the Executive Director. Establish high standards for menu planning, purchasing, storage, preparation, service, and sanitation while adhering to budgetary guidelines to improve food costs. Recruit, interview, hire, evaluate, coach, and terminate staff; orient, train, and supervise all personnel. Conduct in-service education for culinary and health services staff. Interview residents regarding menu preferences and evaluate nutritional changes. Manage stock deliveries, modify meal quantities for resident needs, and maintain accurate staffing schedules. Represent the department at community and resident council meetings. Ensure a safe, clean environment compliant with all state, federal, local, and community policies. Maintain resident confidentiality and professional dress protocols. Requires high school graduation, health certificate, current driver's license, and ability to lift 20 pounds frequently. Required Qualifications
- High school graduation or equivalent
- Additional education or training in appropriate techniques of resident care including nutritional monitoring and assessment
- General nutrition
- Food production and service
- Sanitation and safety
- Management
- Appropriate health certificate as required by local, state, and federal health departments
- Current driver's license
- Compliance with all requirements of Bethesda's Auto Policy
- Must be able to lift and carry a minimum of 20 pounds frequently
- Must be able to lift and carry 50 pounds occasionally
- Ability to perform full range reaching abilities
- Ability to read and follow directions and recipes
- Ability to stir, sift, cut, slice, reach, bend, stand for long periods of time, and ambulate from kitchen to dining room carrying trays, plates, silverware, and accessories
