Job Summary
Supervise inmates in food preparation and tray assembly while ensuring meals meet production plans and special dietary requirements. Review and approve production logs, print recipes, and train staff on proper cooking procedures and HACCP policies. Direct inmates in recipe usage, manage work schedules, and conduct daily population counts. Ensure timely meal service, maintain facility sanitation, and secure all kitchen tools, equipment, and keys. Obtain accurate inventory, receive food items, and adhere to security policies and standard operating procedures. Requires a food safety certification, ability to work independently, and correctional facility security clearance.
Required Qualifications
- Must be over 18 years of age
- Must be able to obtain a food safety certification
- Must be able to follow basic safety procedures and policies
- Must qualify for and maintain correctional facility security clearance
Desired Qualifications
- Minimum of one (1) year of food prep or related work preferred
- Previous supervisory experience preferred
- Previous experience interacting with inmates a plus
- Ability to motivate and supervise inmates and/or team members to attain quality and quantity of food production in a correctional work environment
- Ability to work independently with limited supervision
- Ability to exercise good judgment and tact
