Job Summary
Supervise Correctional Food Service Officers and offenders performing large-scale food production. Oversee preparation and service of regular and therapeutic diets for offenders; plan, direct, and supervise daily meals; maintain accurate records; utilize computerized food and nutrition systems; conduct employee appraisals; perform food preparation, serving, storage, menu planning, substitutions, and maintain sanitation. Knowledge/skills in sanitation, menu planning, inventory management, and supervision of staff and offender workers; ability to work varied shifts including weekends and holidays to ensure 24/7 coverage.
Required Qualifications
- High School or General Educational Development (GED) diploma AND three years of experience in institutional food preparation and food services, in management of a commercial food service operations, or as a Correctional Officer, OR two years as a Correctional Food Service Officer; or an equivalent combination of education and experience.
- Necessary Special Qualifications: Must be eligible for certification by the North Carolina Criminal Justice Education & Training Standards Commission.
