Job Summary
Prepare large quantities of meats, fish, gravies, cereals, soups, and vegetables according to the menu plan. Manage inventory by placing and receiving orders for food and supplies. Ensure food quality and schedule preparations while maintaining high standards of sanitation and safety. Guide and train employees, including inmate/detainee food service workers, and inspect their work. Requires high school diploma, two years of quantity food production experience in commercial, military, or institutional settings, and ability to communicate production requirements. Physical duties include lifting up to 60 lbs and working in extreme temperatures.
Required Qualifications
- High school diploma or equivalent certification
- Minimum two (2) years prior experience in successfully managing and/or quantity food production experience in commercial, military, or institutional setting
- Must be able to communicate to all personnel the minimum production/service requirements of the job
- Lift or carry up to 10 lbs.
- Lift or carry up to 20 lbs.
- Push/pull up to 40 lbs.
- Bend, stoop, reach above shoulder level
- Walk
- Work with machinery and/or in extreme temperatures
- Lift or carry and push/pull up to 60 lbs.

Desired Qualifications
- College credits or relevant technical training courses in food service preparation and cooking
- Prior cooking and correctional food service training
