Job Summary
Prepare all food items for Restaurants, Room Service, Employee Cafeteria, and Banquets using standardized recipes while maintaining cleanliness, sanitation, and safety in kitchen work areas. Complete necessary food and station preparation prior to opening, display buffet items according to hotel standards, and breakdown buffets and kitchen lines at the end of each meal period. Recognize quality standards in fresh produce and meat products, operate kitchen equipment, and follow all Health Department regulations regarding food storage and safety. Support any position in the kitchen as needed and maintain a "Clean As You Go" policy. Work flexible hours including long shifts, standing for the entire duration, and withstand temperature variations.
Required Qualifications
- Culinary experience
- Flexible and long hours
- Exerting up to 50 pounds of force occasionally, and/or 20 pounds of force frequently or constantly to lift, carry, push, pull, or otherwise move objects
- Ability to stand during entire shift
- Ability to withstand temperature variations both hot and cold
- Thorough knowledge of menus and the preparation required, according to hotel standards
- Proficiency in the following cooking techniques: charbroiling, poaching, deep-frying, sauté, braising, roasting and par-cooking
- Knowledge of herbs and spices and proper use of each
Desired Qualifications
- High School diploma or equivalent and/or experience in a hotel or a related field
