Job Summary
Commis Chef position at Patina at Customs House in Brisbane (Full-time, fixed-term) focused on supporting the Executive and Sous Chef to maintain high culinary standards. Responsibilities include producing high-quality à la carte and function foods for in-house events and external catering, training and supervising kitchen hands, safe operation of kitchen equipment, monitoring fridge and stock temperatures, communicating stock needs to the chef in charge, and adhering to food safety plans. The role emphasizes paddock-to-plate philosophy, shared dining experiences, and contributing to a high-volume, high-quality service environment within a heritage-listed venue. Requires completion of cookery apprenticeship and a minimum of two years’ Commis Chef experience, plus solid knowledge of food production for both à la carte and banquet settings, strong organisational and interpersonal skills, and a professional attitude. Required Qualifications
- Completion of an apprenticeship in cookery
- Minimum two years’ experience as a Commis Chef in a similar establishment

- Well-developed organisational, communication, and interpersonal skills
