Prepare ingredients for cooking by portioning, chopping, and storing food; wash and peel fresh produce. Cook food according to recipes, quality standards, and presentation guidelines while operating ovens, stoves, grills, microwaves, and fryers. Test foods for proper doneness and monitor food quality throughout the shift. Set up and break down work stations with mise en place, ensuring proper portioning and garnish for service. Wash and disinfect kitchen areas, tools, knives, and equipment to maintain sanitary conditions. Check appliance and food temperatures, report maintenance issues, and ensure compliance with HACCP guidelines and safety policies.
