Job Summary
Lead bakery operations by overseeing production planning, menu development, quality assurance, and team leadership to ensure consistent delivery of exceptional breads, pastries, and viennoiseries. Drive innovation and continuous improvement in collaboration with culinary leadership to uphold world-class culinary standards and guest expectations. Manage food safety, inventory, and cost efficiency while mentoring a high-performing team within the luxury hospitality environment at Raffles Jakarta.
Required Qualifications
- A minimum of 5 years of progressive experience in bakery operations
- Strong expertise in artisan bread, viennoiserie, pastry, and baked goods production
- Previous experience in a leadership role
- A Diploma or Degree in Culinary Arts, Pastry & Bakery, or a related discipline from a recognized culinary institution
- Previous experience in a luxury hotel, upscale restaurant, or premium bakery
- Strong understanding of luxury service standards and guest expectations
- Demonstrated leadership and people management skills
- Ability to inspire, coach, and develop a high-performing bakery team in a fast-paced environment
- Proven ability to develop innovative bakery offerings
- Ability to standardize recipes
- Ability to contribute to seasonal menu planning
- Ability to maintain exceptional quality and consistency
- Strong knowledge of food safety, hygiene, and sanitation standards
- Solid understanding of production planning
- Solid understanding of inventory management
- Solid understanding of food cost control
- Solid understanding of waste minimization
