Job Summary
As Chef Manager, oversee day-to-day kitchen operations in Victoria, BC; order ingredients, plan menus, assist with preparation and service of food, and ensure HACCP and FOODSAFE compliance. Lead staff training, development, and mentoring; supervise kitchen staff to meet health, safety, and quality standards; manage inventory bi-weekly; oversee labour and chemical resource usage; accommodate dietary restrictions (allergies, vegan, vegetarian); address equipment maintenance with management and maintenance teams. Offer entails extended health and dental benefits, and paid travel time. Requires a Journeyperson or Red Seal, SafeCheck/HACCP certification, and 10+ years of experience across hospitality/food service and roles in hotels/resorts/restaurants/remotes lodges; proficient with Microsoft Excel, Word, GFS, and Outlook; strong menu costing and wage-control capabilities.
Required Qualifications
- Journeyperson or interprovincial Red Seal Certificate
- SafeCheck advanced food safety certification or HACCP certification
- At least 10 years’ experience in the hospitality/food service industry
- At least 10 years’ experience as a Chef in hotels, resorts, restaurants and/or remote lodge
- Knowledge of computer programs (Microsoft Excel, Microsoft Word, GFS, Outlook)
- Extensive knowledge of menu costing, recipe cards implementation and wage control
- Excellent practical and theoretical background in all areas of the kitchen (Hot Kitchens, Cold Kitchens, Pastry/Bakery, Butchery and Banquets)
- Effective leadership style, positive outgoing personality and effective listening skills
