Job Summary
Chef de Partie responsible for overseeing a specific kitchen section (e.g., grill, sauté, pastry), preparing and presenting dishes to high standards, managing stock and ensuring food safety, collaborating with junior staff, and maintaining consistency with restaurant standards. Requires HACCP and Health & Safety knowledge, proficiency in multiple cooking techniques, recipe replication, proactive operational support, efficient kitchen-section management, policy adherence, and adaptability in a fast-paced, Michelin-starred/Michelin Bib Gourmand environment in Valletta, Malta. Involves training, waste minimization, inventory control, and contributing to cost control while upholding environmental practices; roles include interaction with Head/Sous Chefs and guests.
Required Qualifications
- Be familiar with HACCP Standards and Health & Safety Regulations as stipulated by Law
- Proficiency in a wide range of cooking techniques (grilling, baking, sautéing, etc.)
- Be able to follow and replicate recipes accurately, maintaining consistency and quality
- Be proactive to the needs of the Kitchen operation, and anticipate any shortcomings
- Effective management of their kitchen section, ensuring smooth and efficient operations
- Demonstrate understanding and awareness of all policies and procedures
