Job Summary
Chef de Cuisine at Mujō, a one-star Michelin omakase-style sushi restaurant with 15 seats, open for dinner only, seeks an experienced leader to manage the kitchen team, collaborate with the Executive Chef on seasonal menus focused on Japanese technique, and engage guests directly at the counter in a high-end, open-kitchen setting. Responsibilities include curating and executing a seasonal menu with a focus on nigiri and small plates, maintaining cleanliness and organization, training and motivating staff, producing timely, high-quality work, interacting professionally with guests and management, and ensuring food safety, cost control (food and labor), and accurate reporting. Strong interpersonal and multitasking abilities, plus the ability to communicate effectively with supervisors, coworkers, and guests, are essential.
Required Qualifications
- Experience in fine dining restaurants
- Strong interpersonal skills and ability to work effectively in an open-kitchen and chef’s counter environment
- Ability to communicate while multi-tasking and interacting with guests
- Ability to interact positively with supervisor, management, coworkers, members, and the public to promote a team effort
- Ability to produce work that is accurate, complete, and of high quality
- Ability to write reports, business correspondence, and procedure manuals
- Ability to calculate figures and amounts such as food cost, labor cost, proportions, percentages
- Active practice of food safety procedures
- Ability to train and motivate team
