Job Summary
Prepare and package cooked product for shipment while implementing proper Smokehouse department procedures. Perform oven washdowns, pre-flight checks, and monthly cooler deep cleans based on SSOP requirements. Document HACCP checks, conduct product checks including temperature and pH monitoring, and maintain accurate smoking records. Analyze situations to resolve production errors and deviations, ensuring full cross-training and timely completion of all products. Work in temperatures of 40 degrees or less, standing for 10 hours daily, with a mandatory overtime schedule.
Required Qualifications
- Understanding of GMP's, HACCP and SQF guidelines
- Must be able to read and write in English
- Must be able to work in temperatures of 40 degrees or less
- Must be able to stand for 10 hours per day
- Must be able to bend, stoop, and squat as needed
- Must have the ability to work in a fast-paced environment
- Must be able to lift up to 35 pounds
- Must be able to work 40 or more hours per week
- Must be able to work mandatory overtime if necessary
- Must have good hand/eye coordination
- Must be highly attentive to detail
