Job Summary
Prepare and package cooked product for shipment while implementing proper Smokehouse department procedures. Perform oven washdowns, pre-flight checks, and monthly cooler deep cleans based on SSOP requirements. Document HACCP checks via red zones and conduct product checks including oven temperature, Powis graphs, pH monitoring, and lethality stage verification. Maintain accurate smoking records, analyze production deviations, and ensure full cross-training through accurate operator oven process rotation. Follow schedules to complete products timely while maintaining a safe work environment by monitoring foot traffic and complying with legal regulations.
Required Qualifications
- Understanding of GMP's, HACCP and SQF guidelines
- Must be able to read and write in English
- Must be able to work in temperatures of 40 degrees or less
- Must be able to stand for 10 hours per day
- Must be able to bend, stoop, and squat as needed
- Must have the ability to work in a fast-paced environment
- Must be able to lift up to 35 pounds
- Must be able to work 40 or more hours per week
- Must be able to work mandatory overtime if necessary
- Must have good hand/eye coordination
- Must be highly attentive to detail
