Job Summary
Cut meat for a custom processing whole-animal butchery operation, including retail cutting as needed, while operating knives, handsaws, and bandsaws to fabricate retail cuts from subprimals. Assist with grinding meat, evaluate product quality to ensure LGCM standards are met, and follow USDA guidelines to produce safe food. Maintain a clean workplace by participating in cleaning and sanitation duties. This role requires identifying beef, lamb, pork, and poultry primals and mastering techniques to clean, cut, trim, bone, tie, and grind products. The position involves working on the processing floor near carcasses, blood, and fluids, lifting up to 80 pounds, and moving on hard floors in temperature ranges from 0 to 40 degrees. Candidates must have at least one year of meat cutting experience and possess strong communication and organizational skills.

- Must be able to operate in a variety of temperature environments from a chilled, cutting room floor that can be a wet environment, to coolers kept in the 40o range, to freezers that are kept in the 0o range
- Must be able to tolerate working near animal carcasses, blood, and other fluids
- Must be able to operate meat processing equipment such as knives, handsaws, and bandsaws
- Must be able to assist with grinding meat
- Must be able to evaluate the quality of products and ensure LGCM standards are met
- Must be able to follow USDA guidelines to produce safe food
- Must be able to keep workplace clean and participate in cleaning and sanitation duties
- Must be available for Monday-Friday hours
