Job Summary
Inspect liquid eggs for imperfections (bloodspots, meat spots, rots) and remove shell fragments; operate breaker/candler equipment, pull trigger handles when imperfections are detected, and discard faulty eggs into inedible buckets. Perform manual candling of eggs on the conveyor, monitor the production process, maintain cleanliness in the processing area, complete hourly checklists, and train/oversee Breaker Machine Operators and Candler roles in procedures. Interact with USDA inspector and follow OSHA safety regulations; perform duties of Operator/Candler as needed and support other tasks as assigned. Comfortable on a fast-paced line with basic arithmetic, attention to detail, and good hand–eye coordination; willing to work as part of a team and to learn multiple procedures within the egg-processing operation.
