Job Summary
Bread Bakery Assistant Manager oversees the production of bread products for an Eataly location, including breads, pizza alla pala, rolls, and focaccia, and assists with managing a 24-hour operating bakery. Responsibilities include leading, directing, training and developing bakery team members; maintaining natural yeast and organic flour processes; ordering ingredients and supplies; coordinating with management; overseeing front-of-house/bakery operations; completing administrative duties (ordering, scheduling, budgeting, inventory); maintaining sanitary production areas per health standards; investigating and resolving incidents; and ensuring compliance with quality standards and authentic Italian recipes. Required: 3+ years baking production experience, ability to work onsite with a 24-hour team, and familiarity with wood-burning ovens; strong time management and communication skills; managerial experience preferred; culinary degree preferred.
Required Qualifications
- 3+ years of experience in baking production and mastery of related techniques
- Experience operating a wood burning oven
- Previous managerial experience highly preferred
- Degree from a post-secondary culinary program highly preferred
