Job Summary
Boning Hall Supervisor responsible for Boning Hall Operatives ensuring consistency and compliance to boning, butchering, trimming, packing and finishing requirements for red meat for sale and consumption, in accordance with client specifications and Company SOPs. Coordinates department activities to produce safe, quality products to agreed quantities and deadlines in a clean, hygienic environment. Demonstrates and monitors compliance to PPE, knife safety, hygiene and quality standards; maintains knowledge of customer specifications, yields and margins; rolls out specification changes to the team; oversees line setup and checks; ensures waste minimisation; supports audits and corrective actions; drives continual improvement in throughput, efficiency and costs; leads staff, manages leave/absence/discipline processes, and mentors/develops talent for succession planning; collaborates with management on training needs and achieving production targets; performs other duties as instructed by management within competency.
Required Qualifications
- Demonstrate and monitor compliance to Company’s PPE requirements, knife safety requirements, hygiene and quality standards, department SOP’s and customer specifications
- Maintain superior understanding and knowledge of customer specifications, yields and margins
- Roll out specification/task changes and/or new customer requirements to all Boning Hall Operatives ensuring full understanding and compliance
- Familiar with daily production plan, working with team to set up line, completing relevant checks and ensuring materials are ready to use
- Complying with quality specifications and understanding yield values
- Minimising and reporting of waste appropriately
- Cooperate and assist with Internal and External audits as required, implementing any corrective and preventative actions
- Continual improvement and reporting on section throughput, efficiencies, costs etc
- Promote and encourage staff to deliver a quality product on a consistent basis by leading by example
- Staff management for annual leave, absence, disciplinary and grievance processes, with support as required from management
- Monitoring and identifying team training requirements, providing coaching, mentoring or delegating further training as required
- Working with management to identify and develop talent and high performers, including succession planning
- Any other duties as instructed by management and within the competency of the post holder
