Bakery Production Manager

Job Summary
Oversee the production of bread products at Eataly Los Angeles, including breads, Roman-style pizza, rolls, focaccia and seasonal items, and lead a 15-20 person bakery team in a 24-hour operation. Collaborate with the GM of Retail and the Corporate Head of Bakery on recipe quality, inventory, and budget; manage scheduling, payroll, hiring, training, and performance. Ensure compliance with Department of Health standards while maintaining high-quality ingredients (natural yeast, local and organic flours) and authentic Italian recipes. Monitor inventory, transfers, and waste, track sales and costs, and work with leadership to keep operations within budget. REQUIREMENTS include extensive bread production experience, leadership of a sales/production team, ability to work weekends/nights/holidays, physical capability to lift 50+ pounds, and proficiency in Microsoft Office. Preference for a post-secondary culinary arts degree.
Required Qualifications
- 5+ years of experience in bread and related production
- 2+ years of experience managing a sales and production team; preferably in a wholesale or grocery bakery department
- Degree from a post-secondary culinary arts training program highly preferred
- Ability to oversee a 24-hour-operating bakery, including working weekends, nights and holidays
- Ability to lift over 50 pounds
- Ability to exert well-paced mobility for up to 8 hours, including standing, walking, bending and squatting
- Proficiency in Microsoft Office
- Excellent communication skills
- Strong time management skills
