Job Summary
Lead daily operations of the hotel's Food & Beverage outlets, including the Atrium Garden Restaurant, Ball & Chain, Marine Lounge Bar, Poolside Bar, Minibar, and Room Service. Manage labour efficiency, monitor COGS and stock variances, and prepare rosters while acting as Manager-on-Duty for opening, closing, and floor operations. Drive revenue through upselling, promotions, and menu engineering, and oversee recruitment, training, and performance management of the F&B team. Ensure compliance with RSA, liquor licensing, food safety, and WHS requirements while resolving guest service issues. Support budget forecasting and collaborate with other hotel departments on events and activations. Requires hands-on leadership with flexible availability across mornings, evenings, weekends, and public holidays.
Required Qualifications
- Demonstrated experience in Food & Beverage, restaurant or hotel outlet management or in a supervisory capacity
- Proven ability to lead teams in a busy hospitality environment and maintain strong service standards
- Practical experience with rostering, payroll or labour control, COGS, stock management and revenue performance
- Strong guest service, communication, coaching and problem-solving skills
- Sound working knowledge of RSA, liquor licensing, food safety and WHS requirements
- A hands-on leadership style
- Flexible availability across mornings, evenings, weekends and public holidays
