Job Summary

Supervise line and production cooks and stewards to ensure performance adheres to budget and standards. Conduct proper ordering procedures to maintain par levels, perform daily inventory walks, and manage labor control while assigning duties and evaluations. Coach, discipline, and mentor staff members; ensure accurate scheduling based on forecasts and recommend employment needs. Coordinate catering functions, maintain product specifications, and calculate COGS to troubleshoot cost discrepancies. Forecast labor costs using historical data, train new staff, and report accidents or low inventory to Department Heads. Maintain high-level product knowledge, establish rapport with guests, and ensure venue continuity during emergencies while adhering to all safety and sanitation practices.

Required Qualifications

  • Three to five years' experience working in a supervisory capacity
  • Experience in a high volume environment
  • Ability to supervise multiple levels of culinary workers
  • High school degree or GED
  • ACF certification or appropriate program or equivalent
  • Certified Professional Food Manager Certification
  • Health permit/food safety and Alcohol Awareness
  • Ability to communicate clearly with guests in the primary language of the restaurant (Primarily English)
  • Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals
  • Ability to effectively present information and respond to questions from groups of managers, clients, and guests
  • Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals
  • Must be able to work in a fast-paced, high energy, and physically demanding environment
  • Must be able to spend 90% of working time standing, walking, and reaching and 10% of working time sitting
  • Must be able to carry loads greater than 35 pounds and exert up to 50 pounds of force occasionally, and/or up to 30 pounds of force frequently
  • Must be able to hear sounds at normal speaking levels with or without correction
  • Specific vision abilities include close, distance, color, peripheral, depth perception and the ability to adjust focus

Desired Qualifications

  • Associate's degree (AA) or equivalent from two-year College or technical school
