Assistant Food & Beverage Director

Job Summary

Develop schedules for all food and beverage departments according to budget and forecast, manage alcohol ordering and beverage pour costs, and ensure food quality and consistency with kitchen leadership. Assist in directing operations, including high-level communication, service training, inventory, labor controls, and catering functions, while managing managers and front-line associates across all outlets. Lead interviewing, hiring, training, and performance evaluations for associates, monitor business volume forecasts to plan labor and costs, and implement Troon standards and policies. Maintain service standards, resolve guest complaints, and complete month-end inventories for kitchen, bars, and beverage carts.

Required Qualifications

  • Field related education or one or more years of related experience and/or training; or equivalent combination of education and experience
  • Food Safety and Applicable Sanitation Training
  • Alcohol Awareness Training
  • Must meet state age requirements for handling alcoholic beverages
  • Ability to read and speak English
  • Regular and reliable attendance

  • Complete and comprehensive understanding of the physical infrastructure, food and beverage controls and financial back office systems of a hospitality/food service environment
  • Working knowledge of food and beverage service equipment and current trends
  • Exceptional personal hygiene and positive representation of the organization to Troon employees, clients and vendors
