Job Summary
Direct all phases of the food service operation to assure adequate and efficient service for residents and employees. Establish policies and procedures, prepare and maintain the food service budget, and plan in-service training programs including orientation and staff development. Conduct routine inspections for compliance with state, federal, and facility regulations while visiting residents to evaluate meal excellence. Consult with dietitians on special diet menus, coordinate with other facility services, and maintain sanitary hygiene standards. Assist in vendor interviews, recommend equipment purchases and repairs, and prepare reports. Requires an associate degree in food service or nutrition with four years of experience, or equivalent high school education with six years of experience.
Required Qualifications
- Thorough knowledge of modern methods, materials and appliances used in large scale food preparation and service
- Thorough knowledge of the sanitary aspects of food preparation and service
- Good knowledge of food values and costs
- Ability to plan and direct the work of others
- Ability to plan and direct a large-scale food service operation
- Graduation from an accredited college or university with an associate degree in food service, nutrition, or a closely related field and four (4) years of responsible food service experience in a large-scale/institutional food service program, with at least two (2) years in a supervisory capacity
- Graduation from high school or a GED and six (6) years of responsible food service experience in a large-scale/institutional food service program, with at least two (2) years in a supervisory capacity
