Job Summary
Prepare and bake artisan breads including sourdoughs, yeasted loaves, and specialty items while executing laminated doughs for croissants, pain au chocolat, danish, and seasonal viennoiserie. Maintain consistency, quality, and presentation across all baked goods by managing fermentation, proofing, and baking schedules with precision. Follow established recipes while contributing creativity and seasonal ideas, and uphold a clean, organized, and food-safe work environment. Collaborate closely with the pastry and culinary teams to support restaurant and special event needs. This full-time role requires strong technical skill, consistency, and a passion for traditional baking and laminated doughs, with availability for early mornings, weekends, and holidays.

- Proven experience as a professional baker
- Strong knowledge of bread baking techniques
- Strong knowledge of laminated dough production
- Understanding of fermentation
- Understanding of dough handling
- Understanding of temperature control
- Ability to work early mornings
- Ability to work weekends

- Completed a Baker/Patisserie Apprentice Program
- Completed a Baking and Pastry Arts Management program
- Knowledge in a wide range of ingredients
- Knowledge of baking equipment and techniques
- Knowledge in precautionary measures for possible hazards - WHMIS
